This recipe was kindly shared with me by a former health coaching client of mine. I put my own twist on it to accommodate my food allergy limitations.
This is such a quick and simple recipe to make. It literally took me all of 25 mins from prep to the table.
– 1 container of roasted red pepper hummus
– 1/2 cup water
-1 teaspoon of minced garlic
– 1 chopped onion
– 1 red pepper
– 1 orange pepper
(Or your choice of peppers and veggies)
– 1 box of gluten free pasta of your choice
Sauté veggies, onions and garlic in water while pasta is boiling. (You can add any spices that you think will blend well with this combo of continue as is)
Once veggies are soft, add hummus – and stir in water until creamy consistency.
Strain pasta when cooked to the texture that you like. Stir in hummus sauce mixture or serve on top of desired pasta serving.
